Bacon Wrapped Scallops (with Asparagus) Recipe

Time: 30-40 minutes
Ingredients:
  • 1lb. bacon
  • 1lb. Scallops (get these from Costco)
  • Asparagus
  • Olive oil
  • Salt & Pepper
  • Bamboo sticks
  • Butter Sauce
    • 1/3 cup Savignon Blanc
    • 2 teaspoons White Wine Vinegar
    • 1/2 stick unsalted Butter (cut into tablespoon pieces, cold)
Process:
  1. Cooking the asparagus
    1. Preheat oven to 425 degrees
    2. Cover the asparagus in olive oil, salt, pepper
    3. Cook asparagus for 12-15 minutes
  2. Cooking the bacon
    1. Cut the bacon strips into half
    2. Use a cast iron grill and some olive oil, cook the bacon pieces a bit soft so that they can be wrapped around the scallops
  3. Cooking the scallops
    1. Dry off scallops with paper towel before cooking
    2. Remove some of the bacon grease, add some olive oil to the bacon
    3. Cook the scallops and get a sear: 2-3 minutes each
    4. Once finished, add the pieces of bacon to
  4. Cooking the sauce
    1. Using remains of the pan, add white wine and WW vinegar.
    2. Add any scallop juice created
    3. Add in butter until fully melted
