Instant Pot Tomato Bisque Recipe
Ingredients
- 1 tbsp butter or olive oil
- 1/4 onion, diced
- 29oz diced tomatoes
- 1 tbsp sugar
- 1 cup chicken broth
- 1 tbsp dried basil
- 1/2 cup heavy cream
- 6 celery sticks, diced
- 3 carrots, diced
Requires a blender (immersion is best)
Serves about 4-5 cups.
Process
- Heat the Instant Pot on saute, melt butter, cook onions, celery, carrots for 5 minutes.
- Add tomatoes, sugar, broth, and basil over onions. Stir and cover Instant Pot and cook on manual high pressure 15 minutes.
- Release the pressure, and blend mix until smooth.
- Add heavy cream and stir.
